FRYING
QUESTIONS: |

My
oil is smoking, is there something wrong? |
| A |
Possible
causes of oil smoking are:
• Frying of wet or frost covered food
• Insufficient filtering or skimming.
• The oil may need discarding.
• The oil may be overheated – check the thermostat.
• Meat products could have been fried or other
oils added to the fryer.
• Flame alignment on gas fryers may need adjusting
– it may be causing hot spots. |

oil is foaming excessively, is there something wrong? |

Possible
causes of oil foaming excessively are:
• Overheated oil.
• Thermostat may need checking or the temperature
may be too high.
• Filtering may need to be carried out more often.
• The fryer may be overfilled with oil, check the
frying level. |

My
oil is going dark quicker than normal, is there something
wrong? |
| A |
Possible
causes of oil going dark quicker than normal are:
• Insufficient filtering or skimming.
• Temperature too high, check thermostat.
• Oil left at 180ºC with nothing in it. Do
not allow fryer to idle.
• Flame alignment on gas fryers may need adjusting
– it may be causing hot spots.
• The equipment may not have been cleaned properly. |

oil is being used up too quickly, is there something wrong? |

Possible
causes of oil being used to quickly are:
• Refrying food that has already been fried to
reheat it.
• Insufficient draining of food after frying.
• Frying food such as potatoes that have already
been thawed and then refrozen. |

food is not cooking or browning in the expected time? |
| A |
Possible
causes of the food not cooking / browning in expected
time are:
• Frying basket may be overloaded.
• The temperature may be too low, check thermostat.
• Frying temperature may not be recovering from
one load to the next. |

Questions:
Prep Ultra is too thick to drain through the bottom valve
on the fryer when cold. How do I get it out?

If
you heat the oil to around 40°C you will then be able
to drain it through.
Ensure you take care when handling hot oil. |

I use Prep ZT Long Life oil and it has solidified in the
pack – what do I do? |
| A |
Due
to the natural properties of the oil, Prep ZT may solidify
at temperatures below 10°C. If the product has solidified,
store above 20°C until the product is pourable.
This will not affect the quality or fry life of the
product.
Moving forward ensure the oil is stored at ambient
temperature, as it is pourable above 10°C. |

Oil Collection:
The Distributor I use will not collect waste oil from
branded products, what can I do? |
